- 2 large chicken breasts
- ¾ cup bread crumbs
- 2 large eggs
- ½ cup all-purpose flour
- Take the chicken breasts and slice them such that they are half their thickness and then divide them in 8 pieces. Take a cutting board and place the chicken pieces on it and after coveting with plastic wrap, pound the, using a meat mallet in to uniform thickness.
- Take three bowls. Mix ½ cup flour with ¼ tbsp pepper and ½ tbsp salt in the first bowl. Whip together 2 eggs in the second bowl and set ¾ cup bread crumbs in the third bowl.
- With the help of a fork, lift a chicken piece by piercing a corner and dip it into flour. Dip both the sides after shaking off the excess into beaten eggs and then into breadcrumbs. To coat well, turn it a couple of times.
- Over medium heat, heat a non stick pan. To coat the bottom of the pan, add about 3 tbsp’s oil in it. After the oil is hot, slide in it a piece of chicken and for about 3-4 minutes, sauté it per side till cooked through and has golden crust. Line a plate with paper towels and transfer the chicken to it. Repeat the same step with the remaining piece of chicken.
